Affirmation: “I live an authentic life”

I live my life according to my own principles. The outside world has very little impact on my choices. I am proud to be true to myself and have a strong sense of purpose.

My beliefs drive each decision I make in my personal and professional life. I avoid using the appeal of success to sway my mindset.

I enjoy gaining recognition at work for a job well done. But I am happier to gain that reward because I work in a principled manner. My mission is always to do well while staying true to myself.

Friends know that I am the real deal. The person I am with my friends is the person I am at all times. They appreciate that I am honest.

My views on their actions are directly tied to my values. Even though I am gentle when giving advice, I avoid compromising my views to make others feel better. I prefer to be honest than to say what someone wants to hear. It is authentic to be truthful.

Today, my peace of mind comes from living an authentic life. I commit to remaining true to myself and being honest with others. Each day is a chance to renew that commitment.

Affirmation: “Sincerity keeps my actions aligned with my conscience”

One of the things I appreciate most in life is genuine interaction. It is important to me to show others my true intentions.

There are moral guidelines that I follow each day, and following these rules ensures that I maintain peace of mind.

I keep my guidelines in mind when dealing with business partners. Although there are ideal outcomes for negotiations, I avoid compromising my beliefs to achieve them. My role at work is best carried out when I am true to myself and what the job requires.

When I have unpopular decisions to share with my kids, I am firm with my announcement.

I explain to my children that my decisions take their best interests into account. Although I enjoy when they are pleased with my choices, I prefer to follow my instincts. Taking care of their well-being is my most important priority, and using my moral perspective as my guideline serves me well.

Following my conscience makes it easy for me to explain my thoughts, actions, and decisions. I am confident about my choices when I know there is a basis for them.

I portray a positive and reliable image when I declare commitment to my morals, inspiring the trust of others around me.

Today, I am committed to sincerity in all my relationships. My daily mission is to stay true to my beliefs and perspectives. I embrace the validity of interactions that are based on honest expression.

Journal on these questions below and share your answers with your coach.

Self-Reflection Questions:

  1. How do I move forward when my conscience presents me with multiple possible decisions?
  2. How do I respond when others criticize my honesty?
  3. What is my response when I find that someone is dishonest with me?

Affirmation: “I stay true to my convictions”

My belief system guides me through life. Being true to my convictions allows me to identify positive paths to take.

The lessons taught by my parents remain with me today. They are based on values and principles and go far in opening up opportunities for me. I am committed to certain truths that prove themselves worthy as I go about my daily exploits.

My choices at work allow me to have a clear conscience. Each night before bed I express gratitude for being able to stay true to my beliefs.

When opportunities for advancement come around, I consider what is required of me. I stay away from choices that go against what my heart and mind know as true and honest. Anything worth earning is worth earning honestly.

My interactions with strangers are noble because everyone deserves to be treated respectfully. I avoid looking at myself as more deserving than others.

My decisions are based on what I believe to be just. I avoid allowing external influences to cloud my judgment. Promises of wonderful things from others have little power to sway my personal convictions.

Today, I realize how much value there is in staying true to myself. I feel like a powerful and courageous person when I stick to what I believe in my heart. Being sincere about who I am makes me a strong so I can bravely face any circumstance or challenge.

  1. How do I respond to those who try to discourage me from being honest?
  2. What are some of the influences that strengthen my resolve to live positively?

Affirmation: “I feel free to express myself openly”

One of my greatest gifts is my ability to express myself openly. Although many find it challenging, I find that it is easy to let others know my thoughts and ideas.

I have many great friendships because of my openness. People trust me and find me interesting. My openness serves as an inspiration to them. It helps them see how comfortable communicating can be.

It is liberating to be free of a need to censor myself. The best parts of me are free to come out. Freely communicating my thoughts and feelings allows others to get to know the “real” me and strengthens our bonds of love or friendship.

Being able to express myself openly is an exciting way to live. It is also very peaceful. I carry this feeling of peace everywhere I go, like a suit of armor.

When I feel myself becoming self-conscious, I remember that I only have to impress myself. I know I am worthy of others’ attention and have positive things to say. I can be confident that what I have to say will be received well.

Today, I feel comfortable sharing my thoughts, feelings, and ideas. People are drawn to me because of this. I am comfortable in my own skin. I show others they can be comfortable, too.

Journal on these questions below and share your answers with your coach.

Self-Reflection Questions:

  1. How much freedom do I feel to be open with people?
  2. In what situations do I feel stifled or constricted?
  3. What can I do to express myself more openly?

Located at One Sheikh Zayed Road, The H Dubai is renowned for its eclectic and vibrant selection of dining and nightlife experiences; the award-winning Mandara Spa; world-class rooms and suites and a dynamic events centre. The H Dubai is truly a gateway to the Middle East’s most dynamic city of Dubai and we couldn’t wait to enter this destination of life and style.

As my family stepped into the award-winning lobby, we all felt immediately immersed in this luxurious home away from home in the heart of Dubai. The team at The H are not simply hoteliers but describe themselves as “lifestyle curators” who believe that life isn’t about the number of breaths you take but the moments that take your breath away. We were soon to learn how this philosophy underpins everything at The H Dubai.

For parents who want to make the most of the relaxing atmosphere, the temperature-controlled outdoor swimming pool serves as a perfect place to lounge the day away – soaking up the sun on a lounger with pool-side service and soft lounge music.

For busy parents searching for a sanctuary of utter wellness, serenity and bliss, The H Dubai’s Mandara Spa is the place to lose yourself and find peace of mind. The Spa has a deep and resonant philosophy that offers spa therapies embracing the eclectic culture of many global wellness traditions. It offers traditional Balinese treatments and products, which are an ode to the Spa’s roots, as well as a selection of European and Arabian skincare treatments.

Mandara Spa has 10 treatment rooms including two couples’ suites as well as separate male and female changing facilities – each including a thermal and hydrotherapy steam chamber and sauna, a whirlpool and experiential showers. The carefully selected team of Balinese therapists are all trained to the highest spa standards and offer a range of results orientated therapies from facials and massages to body treatments and a signature foot ritual – all using a premium selection of products.

The relaxation lounges of Mandara Spa are the epitome of wellbeing luxury where you can pamper yourself with a selection of complimentary fresh fruit, flavoured waters and exotic herbal teas while enjoying a relaxing moment after your treatment.

For the ultimate luxurious residence, the Presidential Suites offers privileged guests an expansive, exclusive and majestic space in which to enjoy thoughtfully designed accommodation that take on a new height of luxury on the 31st level of the hotel.

We stayed in one of the hotel’s Executive Suites which are both contemporary and Arabian in style designed to be chic and spacious with the discerning traveller in mind. The thoughtful welcome from the hotel team that greeted us as we entered the room made our experience at The H Dubai all the more special.

The suite offers floor-to-ceiling windows boasting breath taking views of the city beyond. The large sitting room and study area has a 42″ LCD TV and MediaHub™ entertainment panel and is separate to an en-suite bedroom with mini-bar, tea and coffee making facilities and personal safe box.

The Executive Suite’s bedroom has a comfortable king sized bed, a walk-in-wardrobe and with the option of adding an additional adjoining bedroom whilst the luxurious bathroom comes complete with a double sink, refreshing rain shower and relaxing deep sunken bathtub.

Life is all about experiences and at The H Dubai, the dining and nightlife experiences are nothing but eclectic. From rooftop bars and world-renowned gastronomies, to intimate lounges and golden era brunches, the hotel’s collection of unique venues have been carefully selected to deliver an unparalleled destination of restaurants and entertainment experiences.

We chose to dine at Moombai & Co Café and Bar, one of the newest dining destinations at The H Dubai. The restaurant takes you on a journey back to the traditional Irani-Parsi cafés of India of which only 25 are left in existence. This casual and vibrant gastrobar combines authentic Indian cuisine with Parsi café culture in the heart of Dubai.

Fusing together the magic of the ancient Indian city of Mumbai with the modern vibrancy of Dubai, Moombai & Co offers a café style menu of traditional Parsi cuisine alongside all of much-loved Indian dishes reminiscent of favourite family recipes.

Not only were we looking forward to sampling the nostalgic dishes created with a quirky modern flair but the upbeat bustling ambiance of the bar is the perfect match for eclectic cocktails that are quirky in character or classic serves with a Middle Eastern twist.

Crawford Market cocktail aged for 60 days in its own bottle and served with ice moulded with the restaurant’s bicycle motif. Blended bourbon complimented with carefully steeped earl grey tea and Nagpur harvested orange zest. A drink with a kick that gets smoother as the ice melts down with time.

From the Bombay Barbecue menu comes Hari Mirch ka Jhinga. Mumbai is known for its “thecha” – a ground chilli mix with garlic and spices.

This dish of prawns marinated in thecha and cooked on the open charcoal fire was the perfect opening to the meal.

Joining the prawn starter was Masala Calamari – squid tossed with spices and curry leaves that tastes so good that all you need is the squeeze of accompanying fresh lime to brighten the flavours.

One of our favourite starter dishes on the menu was Chaap Lababdar – lamb chops marinated with natural tenderizers and coriander chilli mix before being cooked to perfection.

Butter Chicken is the star item on the menu. Choice pieces of tender chicken thigh cooked in clay oven and then simmered in tomato and fenugreek leaves to create a rich velvety sauce.

If you like chicken tikka masala, you will love this chicken dish at Moombai & Co.

Zaffran Gosht Biriyani is an all-time classic of tender lamb with lots of saffron – the king of spices. Layered with rice and cooked to perfection. A definite must-try dish on the Moombai & Co menu.

These dishes go perfectly with Kachumber Raita with Pomegranate – a accompaniment dish of hung yoghurt mixed with greens and pomegranate, flavoured with roasted cumin.

As for the drinks as well as a John Walker Black Label cocktail with honey ginger and sour mix, we enjoyed the Munna Bhai M.B.B.S  which adds a Parsi twist on a classic whiskey sour with house raspberry cordial & cherry added to the classic recipe. And who doesn’t like tequila? At Moombai & Co they have a special tequila cocktail served in an old PATRÓN SILVER bottle.

Moombai & Co offers colourful café style menus delivering traditional Parsi cuisine with all of your favourite dishes reminiscent of an Indian Auntie’s clearly loved recipes. This is a great place to drop in and hang out when in the vibrant Middle Eastern city of Dubai.

The luxurious rooms have refreshing views of hotel’s azure olympic-sized pool, Dubai’s dramatic skyline or the iconic Burj Khalifa. The stunning views are rival those of any of the other luxury hotels in Dubai.

From the Presidential Suite to the Premier Rooms, the interiors feature timber floors, rich fabrics, hand-tufted rugs and specially commissioned artwork which further accentuate the stylish elegance of the rooms. The magnificent Italian marble bathrooms are all fitted with a standalone bathtub with a separate glass-panelled shower and also afford spectacular views of the stunning city of Dubai.

There’s so much for families to enjoy at The Oberoi, Dubai from the luxurious and comfortable guest rooms to the temperature-controlled olympic-sized outdoor pool where you can enjoy the hotel’s legendary hospitality with some cool drinks and tasty poolside snacks whilst lazing in the sun or taking a dip in the 25 metre long heated pool.

The Oberoi Spa in Dubai offers a comprehensive range of holistic therapies that include Western, Balinese, Thai and Ayurveda massage treatments to promote relaxation, rejuvenation and wellbeing in luxurious surroundings. For busy parents in need of pampering, we particularly recommend the Ayurvedic inspired rituals which include treatments using Abhyanga traditional Indian massage, Padabhyanga reflexology, Marma Point Therapy, Shirodhara warm oil therapy and Hot herbal poultice therapy. All the treatments are immensely relaxing, calming and leave your mind and body feeling balanced and rejuvenated.

Culinary highlights at The Oberoi, Dubai include an array of sensory experiences and we were delighted to dine at their Indian speciality restaurant Ananta. The culinary philosophy behind Ananta at The Oberoi, Dubai is the creation of a gastronomic bridge between traditional and post-modern Indian cuisine. Ananta restaurant serves a tantalizing array of culinary masterpieces, innovative specialities and classical dishes embellished with contemporary flair in sumptuous surroundings. Even the waitresses look spectacular in their stunning saris.

Ananta offers unparalleled luxury fine dining in Dubai. Luxuriously furnished in rich crimson with crisp, white linen tables, Ananta is dominated by a magnificent show kitchen where guests can watch our master chefs hand craft Indian delicacies in traditional, coal-fired clay ovens. The menu focuses on cuisine to tantalises the senses including a tasting menu highlighting the restaurant’s new #7Senses dining concept. Chef Sreejith promised to take us on a sensory jaunt of gastronomic brilliance and the menu looked sensational.

First to whet our appetites was some crunchy poppadoms with a choice of chutneys and dips.

The team at Ananta believes that “eating appetizers gives a spectacular joy to life and contributes immensely to goodwill and happy companionship for the main courses to follow”. To test that theory we were served with a selection of delectable appetizers from the post-modern and traditional era of Indian cuisine.

A story about a toothless Indian king accompanies the selection of entrées including the aforementioned dish of Shahi Nehari – 48 hour slow braised Indian lamb shank with onion and spices served with taftan.

We were told that “One of the very nicest things about life is the way we must regularly stop whatever it is we are doing and devote our attention for the first time to the gastronomic pleasure of Ananta’s main courses from the post-modern and traditional era”. We couldn’t agree more as our attention was drawn to these delicious dishes.

Delicious dishes on the degustation menu include Chicken tikka masala – succulent chicken cooked in onion and tomato based sauce with fresh coriander; Hyderabadi jhinge ka salan – prawns simmered in nutty gravy tempered with mustard and red chilli; and Dal makhani – 36 hour sous vide black lentils cooked with butter. Chef Sreejith and his team did a fantastic job pleasing our palates with this plates of perfection.

Our culinary journey from the traditional to the post-modern was almost at an end. To finish the exciting meal, we enjoyed two desserts beginning with Ananta’s interpretation of traditional Kulfi served with saffron pistachio and malai.

For those with a sweet tooth, Ananta’s dessert menu is sure to please with its post-modern and traditional interpretations of mouth watering unique and home-made desserts such as these delightful gulab jamun – sweet and sticky, the perfect end to a perfect meal.

The Oberoi’s legendary service without compromise is delivered by attentive and caring team members making Ananta at The Oberoi Dubai a favourite dining choice for discerning business and leisure travellers to the amazing city of Dubai in the United Arab Emirates.

Affirmation: “Expressing my true feelings comes easily for me”

Revealing my genuine feelings to others seems to be the best way to go in life. After all, others can only know how I feel when I express my emotions in ways they can hear and comprehend.

Also, it is important to me to share the truth about what I am going through because I want others to understand me. I find that nobody knows “the real me” unless I openly express how I feel to others.

When I experience positive emotions, it is easy to share them with others. Feelings like joy, contentment, excitement, pleasure, and optimism are emotions that I think others are interested in hearing about. And it makes me happy to share these feelings each day.

Although it can be difficult for others to listen to me speak about less positive feelings, like disappointment, sorrow, and sadness, I recognise it is necessary for me to inform them of my current state of mind. So, I use care and appropriate tone of voice to convey feelings of this nature.

Ultimately, others can feel better about our relationship when I show honesty and diplomacy in expressing my less positive emotions.

Today, I vow to keep others apprised of my feelings. Expressing my feelings ensures I remain connected to people in genuinely helpful ways. I value my ability to communicate my emotions to others. I strive to be a reliable, caring friend as well as an open, honest co-worker. Communicating my feelings openly is very important to me.

Journal on these questions below and share your answers with your coach.

Self-Reflection Questions:

  1. Do I honestly express my feelings?
  2. How do I share my true emotions with others? Is it easy or difficult for me to do so?
  3. What steps can I take to ensure I freely express my feelings to others?

Solo offers Raffles Dubai guests with delicious homemade cuisine inspired by Italy’s diverse regions; from Lombardy and Tuscany, to Campania and Sicily. Signature dishes of fresh meat, seafood and pizza are baked to order in the authentic Italian wood-fired oven, the centrepiece of the stylish dining area.

Executive Chef Doxis Bekris has over 20 years of culinary experience starting in his native Greece before branching out all over the world. Within Dubai, Doxis has worked at The Address Dubai Mall and Kempinski Mall of the Emirates. In 2010, he took on the role of corporate food & beverage/culinary Director for Swissôtel Hotels & Resorts.

From 2011 to 2014, Doxis was the Complex Culinary Director at The Westin Resort & The Romanos Luxury Collection in Costa Navarino, Greece. He then joined Fairmont Hotels & Resorts in Kenya as Group Executive Chef.

In May 2016, Doxis took over the culinary operations at Raffles Dubai as Executive Chef. He is also the co-author of several cookbooks, including Famously Mediterranean. Doxis re-launched Solo Italian Restaurant & Bar, taking over the management in 2016. He introduced an attractive and inventive new menu, presenting cuisines from 20 regions in Italy, in addition to wood-fired oven signatures dishes.

Solo prides itself on sourcing local farm produce when the UAE harvesting season allows, whilst also importing seasonal ingredients from Italy. All of the dishes, from the bread, right through to the sauces, pastas and pizzas, are freshly made in-house.

It’s easy to see why Solo won Best Italian of 2016 in the Time Out Dubai Restaurant Awards with dishes like Carpaccio Di Tonno – the freshest thinly sliced raw tuna with Herbs & Spices served with Lemon Dressing, Pomelo, Capers & Mixed Cress Salad. The tastes and textures were divine.

Other antipasti dishes include Fritto Misto – Crispy Fried Calamari, Prawns, White Bait and Mussels are joined by a mixture of classic vegetables such as courgette and aurbergine all served with Lemon Mayonnaise and Spicy Marinara Sauce with a muslin wrapped lemon to brighten the flavours.

Stunning salads to savour include Burrata E Pomodori – Fresh Burrata and Heirloom Tomatoes served with an innovative Basil Sponge and an amazing Tomato Sorbet whose sweetness complemented the cheese perfectly with a dusting of Olive Powder.

Classic Italian dishes to tantalise the taste buds include Risotto Nero ai Frutti di Mare – a delicious dish of Squid Ink Risotto topped with succulent mixed seafood decadently dressed with Lobster Foam and delicate gold leaf.

Another authentic Italian pasta dish to perk up your palate is Ravioli di Spinaci. The creamy sauce paired well with the spinach filling in the handmade ravioli dressed with parmesan and decadent shavings of black truffle.

Meats on the menu that mean business include Carrè Di Agnello – perfectly grilled trimmed Rack Of Lamb was succulent and flavoursome served on a bed of Creamy Polenta with Sicilian inspired Caponata and Thyme Jus.

Another classic dish definitely worth a second look is Spaghetti Alla Chitarra – herbs & spices infuse the freshly made pasta bathed in a delicious Lobster Cream Sauce with a serving of Spicy Caviar on the side.

The dessert menu offers classic sweet treats to finish your Italian gastronomic adventure such as Pannacotta, Cassata and this beautifully presented Tiramisú.

Solo delivers quality Italian food, excellent service and creative drinks, and is the ultimate destination for Italian food enthusiasts in Dubai. Doxis has been heavily involved in repositioning Solo Dubai and developing creative promotional ideas for the restaurant, including Solo Cooking Classes on Saturdays.

In these interactive classes Doxis and his team teach guests how to cook flavoursome Italian dishes from scratch as well as demonstrate professional culinary skills and techniques. A must-try experience for any food lover and one we look forward to on our next visit to this wonderful Italian restaurant in the heart of Raffles Dubai.

The Ritz-Carlton, Dubai is enviably located along the JBR Walk, and offers its guests distinctive Emirati experiences at this luxury resort from sophisticated rooms and suites to international cuisine at one of its 9 restaurants, all just steps away from Dubai’s premier attractions.

Named Best Southeast Asian Restaurant by Time Out Dubai, Blue Jade is the Ritz-Carlton Dubai’s signature Pan-Asian restaurant offering a variety of the most authentic and sought after dishes from across Asia allowing guests to reminisce and relive their travels across the continent whilst giving those whom have not yet experienced Asian cuisine the opportunity to indulge and relish dishes that will be at once new yet familiar to them.

Head Chef Ta Van has created outstanding menus for The Ritz-Carlton Dubai’s signature Asian restaurant that showcases the flavours of his native Vietnam as well as those of Thailand, Singapore, Japan and China. Dining at Blue Jade takes you on a culinary journey across Asia without you ever leaving your table!

Chef Ta Van of Blue Jade at The Ritz-Carlton, Dubai

This award winning restaurant in Dubai Marina also offers special weekly themed nights such as DimSumptuous Wednesdays and Sushi-licious Sundays, which showcases Asian favourites of Cantonese dim sum and Japanese sushi for guest to enjoy on an unlimited basis. Blue Jade also offers an extensive drinks menu featuring interesting cocktails and thirst-quenching beers.

Chef Ta Van served us his favourite classics family style at the table and the restaurant’s sommelier was pleased to offer us signature beverages such as the Blue Jade cocktail classics which were expertly crafted and so tempting even the lobster couldn’t keep his hands off it.

To start with a selection of Cantonese dim sum showcasing the most authentic dim sim flavours from across China to begin our culinary journey through Blue Jade’s Pan-Asian menu.

First up was Chicken Siu Mai accompanied in the classic Cantonese style with Prawn Har Gow. The Siu Mai was complemented by Shitake mushrooms mixed with chicken filling and served with traditional soy sauce for dipping. The Har Gow was served with a piquant Vietnamese sauce which paired well with the seafood filling.

This classic combination was joined by Duck Gyoza served with Hoisin sauce. The freshness of spring onions in the succulent filling was delightful.

The dim sum dishes were followed by Wok Fried Atlantic Lobster. This impressive dish is sure to please the eyes with its beautiful presentation and attention to detail. The lobster meat having been removed from the shell is stir-fried with vegetables in a delicious black pepper sauce which was surprisingly mild but really balanced the sweet flavour of the lobster.

The Pomelo Salad with shrimp, fresh herbs and lime chilli dressing was refreshing to the palate and zesty in flavour with a wonderful contrast of textures from the different components of the dish.

Curry dishes include Duck in Thai Red curry sauce with aubergine and pineapple. The tender meat is bathed in a flavoursome authentic red curry sauce accented by fresh Thai herbs scattered on top.

Other signature dishes include delicately Steamed Halibut with green ginger & vegetables in soy sauce. The herby crust added another dimension of flavour and texture to this fish dish.

Alongside Mr Sloan’s favourite dish of the evening – Miso Black Cod. The delicate velvety flakes of black cod literally fell apart with its sweet caramelised texture complemented by the Japanese miso flavours with sautéed vegetables.

Noodle dishes include traditional Pad Thai and a delicious Singapore Noodles with egg vermicelli noodles tossed with succulent chicken & tender vegetables with curry seasoning.

Chef Ta Van and his team offer a very special dining experience with a passion for sharing the culinary diversity of the largest continent on the planet. Using his skills and experience from the region, the chef brings an array of Asia delicacies to Dubai throughout the year making authentic pan-Asian dishes accessible for guests of The Ritz-Carlton Dubai to experience.

If you’re wondering about the story behind the restaurant’s name, the Blue Jade stone is a talisman of dreams, peace and serenity. It is said to calm and restore the mind and body, and is widely used to temper emotional upheaval and to restore equilibrium. After our wonderful dinner we couldn’t agree more with the choice of name for this dreamy Dubai dining destination.
