The Lounge at Mollie’s Bristol

The brand launched in 2019 with a Motel, Diner & Drive-Thru in Buckland Oxfordshire, followed by a second Motel & Diner in 2021 in Cribbs Causeway, Bristol. These openings are the beginning of Mollie’s ambitious plans to roll out its ‘budget-luxe’ offering with a further 10 locations already earmarked as part of the immediate expansion plan, including the 2023 launch of city-centre based Mollie’s Manchester, opening in the former Granada TV Studios.

The whole customer journey has been carefully thought through, with an effortless, digital-led experience that simplifies the entire guest journey and stay. The Mollie’s app opens a raft of benefits for an enhanced guest experience. Guests can check in online or via the app and have their room key delivered to their phone wherever they are and when it’s convenient for them. Electric Vehicle charging bays can be pre-booked, free-of-charge, before arrival and there’s 24-hour online chat support with the friendly reception team, in multiple languages.

In-room, 50-inch Smart TVs come as standard. Guests’ phones automatically pair with the TV as a remote, casting their personal Netflix or Spotify account directly to the screen and syncing with the super-fast complimentary Wi-Fi, for the ultimate and seamless relaxing at-home experience.

Mollie’s Diner is a modern all-day hang-out serving up contemporary, seasonal cooking for solo travellers or families, friends and lovers. The menu also includes burgers and sandwiches with house made sauces, such as Double Cheeseburgers, Plant-Based Burgers and Chilli Cheese-Dogs.

A New Generation of Wookey Hole

Wookey Hole has begun a new journey to refresh and diversify its offering under the leadership of a family trust that has been set up following the death of Gerry Cottle, the Circus legend and former owner. Gerry bought Wookey Hole in 2003 and he ran the attraction until his death in 2021. Gerry left Wookey Hole to his children in Trust and the family are working hard to both preserve Gerry’s legacy and bring more of the historical aspects of Wookey Hole back to the fore.

Already underway on their new journey, the family has taken the business through a brand refresh and is working through updating the facilities. An extensive renovation of the toilet block located in the entrance car park has just been completed, as well as a brand new games room in the Wookey Hole hotel. There are exciting plans to develop the attraction’s offering further with a brand-new restaurant and calendar of events and activities.  Creating magical and memorable experiences for visitors of all ages will be at the heart of all launches, including the brand-new interactive circus show, Trolls Pop Quiz, the just-launched “SCOOB! 4D Experience”, a thrilling monster trail, returning for the school summer holidays, and Comedy Cavern night on 1 September 2023.

Ellen Ramsay, granddaughter of Gerry Cottle, plays an integral role in the development of Wookey Hole, including performing in the Wookey Hole Circus, taking on the role of the Witch of Wookey Hole and supporting the marketing team. What better way to begin your dining experience at The Brasserie than with some pre-dinner drinks for the grown-ups.

Drinks were accompanied by a moreish selection of breads with extra virgin olive oil and balsamic vinegar for dipping.

Highlights from the Starters include Prawn Cocktail served with brown bread and butter. The prawns were juicy and succulent complemented by the tangy Marie Rose sauce.

Another great Starter is Steamed Mussels (which is also available as a Main dish). The plump mussels are steamed in a creamy white wine, garlic and parsley sauce.

Meat lovers will be delighted with the succulent cuts on offer with Mains such as Roast Rump of Lamb with roasted cherry tomatoes and broccolini served with a rosemary jus.

Another highlight on the menu that’s sure to please committed carnivores is the Slow Cooked Short Rib of Beef served with mashed potato, bacon, mushroom and red wine sauce.

The restaurant is very accommodating to the needs of its guests from offering vegetarian, vegan and gluten-free dishes to providing a Little Ones Menu for its younger diners.

For those with a sweet tooth, must-have desserts include a chocoholic’s dream that’s deliciously dense and served with fresh strawberries, ice cream and a rich chocolate sauce.

Another recommended dessert is the classic Sticky Date Pudding served with a luscious toffee sauce.

From the Little Ones Menu, Minipreneur chose a selection of ice creams and sorbets served with toppings in crunchy waffle baskets.
